100 gr large red chili
200 gr tomato
50 gr candlenut
50 gr shallot
25 gr turmeric
2 gr lime leaf
2 gr bay leaf
15 gr galangal
10 gr lemongrass
salt
1 kg fish (snapper)
100 gr ‘kemang’

1. Make the paste from red chili, tomato, candlenut, shallot and
turmeric
2. Saute the paste with little oil until the smell comes out then add
lime leaf, galangal, lemongrass
3. Then season with salt
4. Marinate the fish with paste then grill both side until cooked
5. For served, put the fish on plate then garnish it with lemon basil
