Spinach and Asparagus Soup

Ingredients :

100 gr             Spinach – rinse and dry

100 gr             Fresh young Asparagus

100 gr             Potato – peel – cubed

50 gr               Onion chopped

50 gr               Leeks – white part only – slice

2 leaves         Bay leaves

1 liter               Vegetables Stock

Salt & Pepper

45 gr               Cream

Crispy grilled Ciabatta or Italian bread

Method :

  1. In a pot, sauté chopped onion with olive oil until soft
  2. Add potato, cook and stir for 3 minutes
  3. Pour the vegetables stock over, add bay leaf and cook until potato become cooked
  4. Add asparagus, continuously cook for 5 minutes, seasoning with salt and pepper
  5. Take out from the heat, let it slightly warm then blend it with spinach until smooth.

Serve ;

Heat the soup in a pot; add cream at last before pour into the bowl, garnish with some blanched asparagus and drizzle with basil oil
